Caramel Slice (Vegan Caramel)
My original Caramel Slice recipe needed a ‘Nonna Lizzie’ food intolerance friendly recipe (except for the chocolate, that remains!).
Base: Oats, Cashews, Walnuts.
Vegan Caramel: Soaked Dates, Soaked Cashews & Coconut Cream.
Vegan Apple Crumble
This was such a delish surprise recipe! Apples are such a versatile dessert ingredient. I always have some in the fridge. So with the spare ‘base’ from the Pistachio Slice, I decided to make a Vegan Apple Crumble.
Remember to simmer the apples in cinnamon before layering it with the crumble. Then bake it for 10-15 mins.
Lemon Curd Cheesecake
This is a guilty recipe. It has eggs, ricotta cheese, cream cheese and sugar…all things I need to avoid. But I have NO regrets.
The lemon curd is citrusy and sweet, cheese is fluffy and the base is not too thick whilst still so crispy.
Worth it.
Caramel Slice (Original Recipe)
My signature dessert at home, I’ve been making this dessert since I was 21 back in Sydney. It is totally not healthy and I can’t even imagine the calories.
You’ll need Scotch Finger biscuits, desiccated coconut, condensed milk, butter Cadbury Dairy Milk chocolate and copha.
Pistachio White Chocolate Ice-Cream Bars
I just love any pistachio white chocolate combo and I wanted to experiment with coconut cream as a substitute for normal cream.
This was a fun little experiment. In all honestly it was supposed to be a ‘slice’ but turned out to be an ice-cream because I kept it in the freezer.
